Greasy hair and tube steak

Usually I take my showers at night, probably more information than most would care to know but that's how I roll. If I don't shower at night it is just plain difficult to get it done with two kids in the morning. So yes, my hair is usually in a pony tail, but I like to think that my "messy" pony tail is actually styling (or maybe I just tell myself that). Last night my shower did not happen. We didn't get home until late from dinner at one of Evan's old friends house, so when we did get back it took all of what energy was left just to get the kids to bed.

Jack was then up during the night coughing and sniffling (he was sleeping on the couch...am I a bad Mom, I didn't want to risk moving him) so when the morning rolled around I made a doctors appointment to make sure that his "wet" cough had not moved into his chest. About a month ago Evan rushed Jack to the E.R. around 1am because he was coughing so much he was wheezing and was almost blue. Come to find out he had the croup, something I thought was reserved for children of neglectful, white-trash parents but actually can happen to ANYONE when the voice box gets irritated (little side not for ya). So, needless to say I am now paranoid of that happening again. When I called the pediatrician I thought we could get in later on this afternoon (after I had showered and put on makeup). No, of course not. The only appointment was in 30 min, so I swept my greasy hair into a not so cute messy pony tail and headed to the doctors. Jack is fine but I still feel gross (the super warm rooms at the doctors office do not help one with greasy hair).

When we got home a couple of hours later I decided to pull something out of the freezer to defrost to make for dinner tonight. It was then that I realized that I have a problem...if my meat is not in "tube form" (insert sexual innuendo joke here...I said insert...I digress) I don't know how to cook it. Seriously. I'm great with chicken casarolls, anything with ground hamburger the occasional lasagna or enchiladas (hey, I know how to cook more than I give myself credit for), but if you leave me with roast or whole chicken I'm helpless. I know that there are many wonderful recipes for roasts in the crock-pot but that would take work researching it. BUT much to my relief Evan soon called to say that he would be working really late tonight (another fun week of short courses for him) so I get the "get out dinner free" card. Tonight on the menu for dinner is Jack's most favoriate thing ever...breakfast for dinner. Yum!
